Black Bean Salad

4 1-c servings

1/2 c chopped onion
2 cloves garlic, pressed
2 c cooked black beans, drained and rinsed
3/4 c tomatoes, diced (I cut grape tomatoes in half)
3/4 c bell pepper, diced
1/4 c fresh cilantro, chopped
2 T olive oil
3 T freshly-squeezed lemon juice
salt and pepper to taste

Mix all ingredients together and chill for a few hours.  This makes a delicious "dressing," so I love to serve it over a big bed of salad greens.
